It is summer in all its heat and glory here in Texas.
Friday night we made fire roasted corn on the cob.
|Start with fresh corn and clean it.|
|Wash and dry.|
|Coat it with butter. Add salt and pepper.|
|Wrap it in foil.|
Mr. Joy & Comfort grilled it for approximately 45 minutes,
turning it every 10 minutes or so to keep it from burning.
He says he's sure it is cooked when he can smell corn.
|You may want to add more butter, salt and/or pepper.|
We cooked extra and I've taken it off the cob
and put it in the freezer. I can warm up 1/4 of a cup
and toss it in salad. Or we can add it to just about
anything we want just to get a taste of summertime.
