Summer Food - Fresh Roasted Corn

It is summer in all its heat and glory here in Texas.
Friday night we made fire roasted corn on the cob.

Start with fresh corn and clean it.

Wash and dry.

Coat it with butter. Add salt and pepper.


 
Wrap it in foil.


Mr. Joy & Comfort grilled it for approximately 45 minutes,
turning it every 10 minutes or so to keep it from burning. 
He says he's sure it is cooked when he can smell corn.

 You may want to add more butter, salt and/or pepper.


Good eats.


We cooked extra and I've taken it off the cob
and put it in the freezer.  I can warm up 1/4 of a cup
and toss it in salad.  Or we can add it to just about
anything we want just to get a taste of summertime.

Looks soooo good! We had DUtch corn this week and it is tough and tasteless. I'm missing Texas. xo Jenny

Oh how I love fresh corn on the cob, especially if it's grilled! Looks so yummy! I have a great salad recipe for corn, tomatoes, and avocado. Yum! Oh -- and haha! Your "I Quilt" title on the next post keeps catching my eye and of course, when I see it, all I can think of is, "Therefore I am." :)

We've been doing the corn thing too - one of Summer's pleasures - but I usually just throw it in a pot on the stove as it's too hot to grill out, and the mossies are rampant after some much-awaited rain this week, I see the devils hatching in the standing water so must get out there and wreak havoc on them!!!!

P.S. Looking back - sorry I was away from Internet in Africa and couldn't connect to read your fun posts - but I do have an iPhone and like it but don't use much of the things possible. It is good for checking e-mail and locations when on the road etc. but I too am not a phone freak and use it seldom compared to the youngsters of today!! I'm not on Facebook and never will be.
